What is sattu? 

Sattu is Indian flour made from dry roasted ground pulses and cereals. Sattu sharbat is quite popular in Bihar, Maharashtra and Uttar Pradesh. In Punjab, sattu is made from barley. This flour is also used to prepare various items like Litti, Kachori, Paratha, and Laddoo. Nowadays, it’s gaining popularity in other parts of India due to its immense health benefits.

How is Sattu Made? 

Sattu can be made with seven different grains-Barley, Chickpea (Chana), Maize, Green Pea (Dried Matar), Pigeon Pea, Indian grass and Horse gram. Sattu packets are easily available in supermarkets.

You can easily make sattu at home with chana dal.  Follow these steps-

  1. First, take two cups of chana dal. Then wash chana dal thoroughly and drain the water,
  2. Boil 3 cups of water over a pan and then add them to this water and cook for 7-8 mins.
  3. Pour into a strainer and drain the excess water.
  4. Transfer them to a clean bowl and cover it and set aside for 3-4 hours.
  5. After 4 hours, spread them on cloth and allow to dry for 3-4 hours.
  6. Take a heavy bottom pan or kadai and cook them on a low flame. Keep stirring after every 5 mins. They should not be stuck to the bottom.
  7. Roast it on low flame for 45 mins. They should resemble like roasted gram.
  8. After roasting, grind them into the fine powder with the help of a mixer.
  9. Now, store this dry roasted powder in a jar.

Sattu sharbat is a popular morning drink. A glass of sattu drink keeps your stomach full for a long time. You can easily find sattu drink in roadside stalls. However, you can make it at home. Follow these steps-

1)    Take the sattu flour in a glass.

2)    Squeeze a lemon.

3)    Mix jaggery powder, rock salt or black salt.

4)    Pour chilled water and blend it well.

5)    Add more water and stir well.

6)    You can add chopped mint leaves or chili and a pinch of chaat masala to make it more flavourful.

Dry roasting prevents the loss of nutrients and preserves the quality. Sattu is an affordable protein source. That’s why it’s also known as “poor man’s protein”. It is also a good source of insoluble fibre and low on glycemic index.  Sattu is also helpful for weight management and Diabetes. Sattu gives us essential nutrients like folic acids, amino acids and minerals like iron, magnesium, and calcium. Sattu is low in Sodium.
